Decadent, gooey and heart-warming. This is an easy sweet fix to give yourself some love!
Prep time: 15 mins
Cook time: 12-15 mins
Makes 10-12 cookies
Ingredients:
1 and 1/2 cup all purpose flour
1/2 tsp baking soda
1/2 cup raisins
1/4 cup semi-sweet chocolate chips
2 tsps Reqado Cinnamon Powder
1 cup brown sugar
1 teaspoon salt (fine texture)
1/2 cup butter melted at room temperature
1 egg
1 tsp vanilla extract
Steps:
In a bowl, combine sugar, salt and butter to form a smooth paste. In the same mixture, add in egg, cinnamon, and vanilla, and whisk vigorously.
Using a separate bowl, mix together flour and baking soda using a whisk. Then add this in to the butter mixture using a spatula, folding gently. Do not over mix to prevent the dough from being too soft or cake-y.
Add in the chocolate chips and raisins, folding these gently into the cookie dough. Once combined, chill the dough in the refrigerator for an hour.
Preheat oven to 180°C or 350°F.
Bring out your baking tray and line it with parchment paper.
Using a spoon or scoop, you can scoop each cookie mix to line up in the tray, placed 3 inches apart because the cookie will spread and grow while baking.
Bake for 12-15 minutes. Make sure you keep an eye on the cookies to prevent it from burning.
Remove cookies from the oven and let it cool.
Serve and enjoy with tea, coffee or milk!
