Decadent Choco Balls by Chef Chesca
Creamy chocolate that melts in your mouth. Not too sweet with a slight cheesy note that would make you eat more. A perfect crowd pleaser whether it's an ordinary day or a special occasion.
Prep time: 15 mins
Cook time: 12-15 mins
Makes 20 balls
Ingredients:
1 block dark chocolate (4oz)
1/2 block milk chocolate (2oz) You can add more if you like
1/2 stick of butter
1/2 tsp Reqado Cinnamon Powder
1 softened Philadelphia cream cheese (8oz)
1/2 tsp salt
For the powder coating:
1/2 cup pure Cacao powder
2 pcs crushed Graham’s
1 tbsp confectioners sugar (optional)
Steps:
To make the chocolate balls, place a tin bowl over a pot of boiling water. The water should at least cover 1/4 of the tin bowl, boiling over medium heat.
Melt the chocolate bars, stirring slowly with a spatula. Then add the butter to melt completely with the chocolate.
Sprinkle with Reqado Cinnamon Powder and let it incorporate. Then add the cream cheese, folding in until fully mixed into the chocolate.
Add a pinch of salt to balance the sweetness. Continue stirring for 2 minutes.
Once the mixture thickens, remove the tin bowl from the pot of boiling water and let it cool. Once cooled, cover with plastic wrap and place in the refrigerator. Do not freeze.
After 1 hour, take out the bowl and prepare a tray lined with parchment paper.
The mixture should have hardened a bit, like a dough. Scoop a teaspoon and form into a ball.
Prepare the coating powder by mixing all ingredients in a separate bowl. Here, you will dump the chocolate balls and gently roll it over until fully coated with chocolate-y goodness.
Line 'em up in a tray and chill again for an hour.
Ready, serve, and devour!
